Doesn’t hold an edge for very long, but at its price I didn’t expect it to. Bought it as a lightweight travel kitchen knife and it is everything I expected it to be.

My GO-TO super sharp, small slicing knife.
Very good Japanese steel slicing knife, but not for the uninformed. This knife must be hand washed and dried after each use as it will rust if not properly maintained. The beauty of this style knife is that, assuming you have the equipment, it an be repeatedly honed and/or sharpened to maintain the 14° 2-side blade angle. And it is so economical that when you’ve sharpened it for the last time it is inexpensive to replace.

Oxidation on blade
Worse purchase for a “brand name. It is NOT real Japanese stainless steel. If it were it would not oxidize the first time I washed it. I cannot return it because I threw away the package believing it was a real Kitchen Aid product.
